Panela
In Colombia the juice from sugar cane is poured into vats where it boils and thickens. Then it is poured into molds where it cools and hardens. This is an important part of the diet of the Colombian people specially the poorer class. The machine that squeezes out the juice is called a TRAPICHE and the solidified sugar is called PANELA.
