Pig slaughtering tradition

Just before Christmas, in the day of St. Ignatius, pig sacrifice is practiced in Romania. In the mentality of archaic societies there is a strong link between the blood and the fertilizer force, between blood and rain. Beside this, the pig will provide food for the family for the year to come. Nothing is wasted, organs, fat, bowels and even blood are all processed and transformed into sausages, aspic and other dishes.
